Pour a quart of cold tomato juice into your favorite mixing bowl and add a diced cucumber, 2 cups of
diced fresh tomatoes, a small minced onion, a diced red or yellow bell pepper, a clove or 2 of
minced garlic, a handul of chopped Italian parsley, the juice of a lemon, a couple tablespoons
of vinegar, a couple tablespoons of extra virgin olive oil, a drop of honey, and salt and pepper
to taste. Combine thoughtfully, contemplate the flavors, and relegate to the fridge for a few hours
of chilling. Remove from fridge, pour a helping into a deserving bowl, and garnish with whatever
garnishing strikes your fancy...croutons, slices of avocado, a dollop of sour cream. Savor your
flavors. Try the recipe a week later, and make it your own.
